Wild South's 2015 Pinot Noir shows the benefits of perfect harvest conditions which worked to create a wine of great intensity. The record temperatures in the second half of summer created superb ripening conditions and led to an early harvest that captured Pinot Noir favours at their best.
Wild South Marlborough Pinot Noir 2015 - Ruby garnet in colour, red cherries and vanilla pod lead to nuances of white mushroom and brambly edge. The silky full palate shows lifted red fruit flavours finishing with velvety tannins carried by balanced lingering acid and fruit flavours.
Food match: Barbecue glazed spare ribs. Mix up your favourite marinade and cover the ribs with it for at least an hour (preferably four to five hours). Heat the barbecue to medium high and cook the ribs for about 15 minutes. In between sips of Wild South Pinot Noir 2015, turn the racks of ribs regularly to avoid too much blackening and apply more marinade as you go.
